Asparagus Thoran

This is an absolutely delicious and nutritious asparagus recipe stir fried with coconut. I usually make asparagus stir-fry by adding olive oil, pepper powder, garlic and salt but I never thought of making a thoran with it. This thoran looks almost like beans thoran and has a slight crunch to it which I really love. If you do not like it crunchy, you can cover and cook for some more time.

Kerala Fish Curry

Kerala fish curry or Meen curry can be prepared in many ways. You can try this fish curry with or without coconut milk, Coconut milk is an important ingredient we add to most of our curries. Fish is a good source of omega-3 fatty acids, proteins, vitamins and minerals and therefore form an important part of our diet. Usually kerala fish curry is prepared in open-mouthed earthenware pots which enhances its taste and also it can stored for more time. One important point to be noted is do not stir fish once it is cooked.

In this dish you can adjust the tanginess by removing the coccum pieces. Also adjust the spice level according to your taste.

RAJMA PULAO

Rajma Pulao

I am always for the lookout for quick and easy recipes. This dish by itself is a full meal….saves me the burden of preparing extra curries.

I always prefer fresh ground ginger garlic paste or homemade ginger garlic paste than store bought. If you prefer cooking kidney beans separately, add the cooked kidney beans only after rice is half cooked. You can also add few mint leaves after frying onions, if you like its flavour. This recipe can also be used to make chickpea pulao, only substitute kidney beans with chickpeas. View recipe.

Aviyal

Aviyal is a traditional dish of South India. Simple and easy to make, it is a delicious and nutritious combo of mixed vegetables cooked in coconut mixture, seasoned with coconut oil and curry leaves. In this recipe, I have used raw mangoes to bring the sour taste to the dish. You can also use so sour curd or tamarind to enhance the sour taste to it. My personal favourite is adding tamarind juice……yumm…I love its taste…..

PAPAYA THORAN

Papaya Thoran

This is a simple and easy to make thoran. Raw papaya is the main ingredient. Papaya is extremely nutritious and is a rich source of anti-oxidant nutrients such as beta-carotene (which is what gives it the orange color; green papaya does not contain this carotene), vitamin A and C and flavonoids, B vitamins, folate and pantothenic acid. It offers numerous health benefits such as lowering cholesterol, aids in weight loss, boosts immunity, protection against heart disease, prevents colon cancer etc. to name a few.
