Rice Crispies on their own are an all-time favourite with kids. Now imagine adding white chocolate and marshmallows to it. You guessed right……absolute heaven. Kids love this treat….well adults too. White chocolate rice crispy treats are super easy, super tasty treats and my kids loved them. I made them for an after school treat and it was gone in no time. Now let’s indulge….:)

Ingredients

  • 1 box Rice Krispies
  • 2 bags mini marshmallows
  • 1 stick of butter, plus more for greasing the pan
  • 1 bag of white chocolate chips, divided.

Method

  • Grease a 9×13″ cake pan or baking dish with butter and then melt one stick of butter in a large pot over medium heat.
  • Add mini marshmallows and begin stirring with a heavy-duty spatula. Add 2/3 of the white chocolate chips and continue stirring. Continue stirring until marshmallows are completely melted.
  • Slowly add the Rice Krispies to the pot and stir until cereal is completely coated with marshmallow mixture.
  • Pour the mixture into your pre-greased baking dish.
  • Butter your hands, then press down cereal into pan.
  • Melt remaining white chocolate chips in microwave. (Heat for 30 seconds, then stir, then repeat until melted. If mixture seems thick, add a tablespoon of vegetable oil.) Place melted white chocolate in a pastry bag. Cut off tip (or corner) of bag, then drizzle on top of cereal. Refrigerate for at least 30 minutes to let the white chocolate harden before attempting to cut into squares.
