Laddoo is a very popular Indian sweet made during almost all festivals and special occasions. There are many variations of laddoos available depending on the occasion and place you are in. This variation of carrot laddoo is made using carrot and is as tasty as the regular laddoos.

Carrot is very good for eye sight and this is a great way to get children to eat the vegetable.

This year on the occasion of Diwali, festival of lights, I made these delicious carrot laddoos. They were over in no time. These carrot laddoos taste very similar to carrot halwa aka Gajar ka halwa. I have already shared the recipe for carrot halwa in one of my earlier posts.

Now, for the preparation of carrot laddoos….

 

Ingredients

  • 4 cups Carrot, grated
  • 1 cup Coconut, grated
  • 2 cups Sugar
  • 6 tbsps. Ghee
  • 1 tsp. Cardamom Powder
  • 10 Cashew nuts
  • 10-15 Raisins

 

Method

  • Heat ghee in a kadai or deep bottomed pan over medium flame.
  • Sauté the cashews and raisins till they turn golden brown and remove from the pan. Keep aside.
  • To the same pan add the grated carrot and sauté it until the raw smell disappears.
  • Add the grated coconut to it and sauté for a minute.
  • Keep the flame low and add sugar.
  • Keep stirring until the sugar dissolves completely.
  • Close the kadai with a lid for 5 minutes.
  • Add the cardamom powder and switch off the flame.
  • Allow it to cool down completely.
  • Add the roasted cashews and raisins to it and mix well.
  • Make small laddoos from the mixture.
  • This laddoo stays good for 2 to 3 days.
