Peanut ukkeri or the stir-fried pulses is an inevitable Navarathri dish among Konganis. Ukkeri is very well a nivedhyam, a perfect tea time snack and a subtle side dish in a gourmet meal. This spicy peanut ukkeri is a dainty dish which also serves as a mid-day snack.  Make sure you use boiled peanuts for this dish. I usually pressure cook the peanuts. Its best to be served when warm. This ukkeri is a very filling snack. My husband and I love this, a perfect tea time snack. 

Let’s start with the preparation of this dish….

 

Ingredients

  • 200 gms. Boiled raw peanuts
  • 1 coconut, grated
  • 2 green chillies, chopped
  • 1 tsp. powdered black pepper
  • 2 sprigs curry leaves
  • 1 tsp. Cumin seeds
  • 2 tsp. Coconut oil
  • ½ tsp. Turmeric powder
  • 1 tsp. Mustard seeds

 

Method

  • Heat coconut oil in a pan.
  • Add mustard seeds and allow them to splutter.
  • Add cumin seeds, green chillies and curry leaves.
  • Once they are fried, add turmeric powder.
  • Add peanuts. Sprinkle salt and pepper for taste.
  • Stir the mixture well and cover the pan for a while.
  • After sometime, remove the lid and sprinkle grated coconut.
  • Mix the ukkeri well and serve hot with tea.
