Broccoli corn stir fry is a vegetarian side dish made with veggies like broccoli, sweet corn and carrots. You can prepare this stir fry with any veggies of your liking such as potato, sweet potato, cauliflower, bell peppers or even paneer. Ingredients

  • 1 cup Broccoli florets
  • ½ cup Carrots, chopped
  • ½ cup Sweetcorn
  • 2 Garlic cloves, chopped
  • ½ tsp Cumin seeds
  • Oil, for sautéing
  • Salt, to taste
  • ¾ tsp. Chilli powder, adjust it according to your spice level
  • ½ tsp. Garam Masala

 

Method

  • Heat oil in a pan and fry cumin seeds.
  • After cumin seeds splutter, add chopped garlic and sauté it.
  • Add all the vegetables and sauté until the vegetables completely absorb all the water.
  • To the cooked vegetables, add chilli powder, salt and garam masala and continue to sauté. You can adjust the spice levels in this recipe according to your taste.
  • Fry for 2 to 3 minutes until all the masalas have fully mixed with the cooked vegetables.
  • Broccoli corn stir fry is ready.
  • Serve broccoli corn stir fry with rice, rotis, sandwiches or wraps.
