Drumstick leaves raita is a comforting and soothing union of protein rich greens and yoghurt. This raita is a very quick preparation in which the tender drumstick leaves are sauteed in seasoning and combined with ground coconut and yoghurt. Kids who do not love spices will love this dish. Yoghurts which are slightly sour are best for this raita. The raita should be thick in consistency so do not add water. Spice levels can be adjusted by using chillies accordingly.

Let’s start cooking….

Ingredients

  • 1 cup Drumstick leaves, tender
  • ½ cup Yoghurt
  • ¼ cup Fresh coconut, grated
  • ¾ tsp. Salt
  • 2 nos. Green chillies

For seasoning

  • 2 tsps. Cooking oil
  • 1 tsp. Cumin seeds
  • ½ tsp. Mustard seeds
  • ½ tsp. Split black gram lentils
  • Curry leaves, few

 

Method

  • Chop the drumstick leaves finely after discarding the stem. Keep it aside.
  • Heat a pan and add oil, cumin seeds, lentils, mustard seeds and curry leaves. Sauté for a second, when the mustard seeds sizzle, add slit green chillies.
  • Continue sautéing for a while and then add drumstick leaves. These greens will wilt and shrink in a few minutes. Switch the flame off and allow it to cool.
  • Meanwhile grind the grated coconut with little water to fine puree and transfer it to a bowl.
  • Next add whisked yogurt, salt and sautéed drumstick leaves to the same bowl. Mix well.
  • Very healthy and soothing drumstick leaves raita is ready to serve.
