This dosa is called ‘instant bajra dosa’ as it is made with bajra flour and can be made instantaneously, you don’t have to grind pearl millet/ bajra in a wet grinder to make the batter. This is a quick and lazy mom’s recipe or call it a quick weekend breakfast option.

Now, to make proper bajra dosas…..I mean ‘not’ the instant bajra dosas, you will have to soak pearl millet, urad dal, rice and fenugreek seeds overnight and grind it. The batter should also be allowed to ferment.

Instant bajra dosa makes an excellent breakfast with good amount of protein, carbs, minerals and iron.Try these lacy and crispy, instant bajra dosa and serve them with red coconut chutney……

 

Ingredients

  • ¼ cup Bajra flour
  • ¼ cup Wheat flour
  • ½ Onion, finely chopped
  • 1 tbsp. Coriander leaves, chopped
  • 1 tsp. Curry leaves, chopped
  • 1 tsp. Jeera or Cumin seeds
  • 1 tsp. finely chopped ginger (optional)
  • Salt, as required
  • Oil, as required

 

Method

  • First take a deep bottomed mixing bowl.
  • Place all the ingredients in a mixing bowl and dry mix it using a whisk.
  • Next add water gradually and continue mixing. The batter consistency should not be too thick. The batter should be watery enough to pour and spread by itself.
  • Heat a tawa or griddle and drizzle with oil. Make sure to grease the pan before pouring the batter. You can also drizzle a few drops of oil to make crispier dosas.
  • Once the tawa is hot, pour the dosa batter, first form an outer circle, then fill it towards the centre. When you pour the batter, the tawa should be hot and small tiny pores should be seen as you pour. That is the right consistency of the batter.
  • Cook the dosas in medium flame. You can cook them covered and skip flipping or flip and cook, its up to you. Continue to make dosas with the rest of the batter or as per your requirement.
  • You can serve these dosas with coconut chutney, tomato chutney or sambhar. Yummy!!
