Mushroom pulao is a simple, quick and extremely tasty pulao. It is a handy recipe when you have little time or are tired to cook and yet long for comfort homemade food. I have used button mushrooms in the pulao, though you can use any variety of fresh or dried mushrooms. You could also make this pulao with mixed veggies of your choice instead of mushrooms.

The addition of coconut milk in this pulao, gives it a rich taste. If you do not have coconut milk, just add water. The entire dish is cooked in a pressure cooker, but you can also make the recipe in a pan.

Serve this goan style mushroom pulao plain or with a side of onion-lemon salad or veggie salad or raita.

For this pulao, you will need…

 

Ingredients

  • 2 tbsps. Ghee
  • 2 Cloves
  • 1 Bay Leaf
  • One Cardamom
  • 1 tsp. Fennel Seeds
  • 1-inch Cinnamon stick
  • 2 medium Onions, sliced
  • 1 Tomato, chopped
  • 2 Green Chillies, chopped
  • 1 Potato, cut into cubes
  • 5 cloves Garlic, finely chopped or crushed
  • 1-inch piece Ginger, finely chopped or crushed
  • 1 tbsp. Black Pepper
  • 1¼ tsp. Salt
  • 3 cups Button Mushrooms, cut into 4
  • 1 cup thick Coconut Milk
  • ½ cup fresh Green Peas
  • 1 cup Basmati Rice
  • 1 cup Water

 

Method

  • Wash and soak the basmati rice in water for about half an hour before starting to cook.
  • Heat ghee in a pressure pan and add in the clove, cardamom, bay leaf, fennel seeds and cinnamon stick. Add in the sliced onions and saute till the onions are nice and brown.
  • Again add crushed garlic, ginger and black pepper to the pressure cooker and saute for 1-2 minutes.
  • Add in the chopped tomatoes, green chillies and potatoes and salt and fry for 5-6 minutes.
  • Next add in the chopped mushrooms and peas. Saute for 10 minutes.
  • Add in the drained rice and saute for 1-2 minutes. To the mix then add coconut milk and water.
  • Adjust the salt if required. Cover and cook for exactly 2 whistles. Remove from heat and wait for the pressure from the cooker to settle on its own.
  • Open the cooker after 20 minutes and fluff up the rice.
  • Tasty mushroom pulao is ready to serve.
