Paneer fried rice is a quick nutritious one pot meal that goes well as a quick lunch box meal or dinner. This easy and simple stir-fried rice recipe is made with paneer cubes and choice of veggies. Basically, this recipe is an extension to the popular veg fried rice with a topping of marinated paneer cubes. It can be served with manchurian or any gravy-based curries.

I would highly recommend using dry or leftover basmati rice for this recipe. If you plan to use freshly cooked rice, ensure to make it moisture free by drying it out in a plate. With respect to the addition of vegetables, it is completely open ended. I have added the basic vegetables, but you can easily experiment with vegetables of your preference. You can use fresh homemade or store-bought paneer for this fried rice.

Now, let’s get on to the ingredients….

 

Ingredients

  • 1 cup Paneer / Cottage cheese, cubes
  • 1 tsp Ginger garlic paste
  • ¾ tsp Kashmiri Red Chilli powder
  • ¼ tsp Salt
  • 2 tsp. Oil

FOR FRIED RICE

  • 2 tbsp. Oil
  • 2 clove Garlic, finely chopped
  • ½ Onion, finely chopped
  • 4 tbsp. Spring onion, chopped
  • ½ Carrot, chopped
  • 4 Beans, chopped
  • ¼ Red Capsicum, chopped
  • ¼ Green Capsicum, chopped
  • 3 tbsp. Cabbage, shredded
  • 1 tsp. Chilli sauce
  • 1 tbsp. Vinegar
  • 1 tbsp. Soy sauce
  • ½ tsp. Pepper powder
  • ½ tsp. Salt
  • 3 cups Rice, cooked

 

Method

  • In a bowl, take 1 cup paneer. make sure to make small cubes.
  • Add ginger garlic paste, chilli powder and salt.
  • Mix well making sure all the spices are well combined. marinate the paneer for 20 minutes.
  • Now heat 2 teaspoons of oil and add marinated paneer.
  • Roast on low to medium flame till it turns golden brown. Do not overcook as it turns rubbery. Keep the roasted paneer aside.
  • In a large wok, heat oil and saute garlic, chopped onion and spring onion on high flame.
  • Next add carrot, beans, red capsicum and green capsicum.
  • Stir fry on high flame till the veggies are cooked yet crunchy.
  • Further add cabbage and stir fry for few seconds.
  • Also add chilli sauce, vinegar, soy sauce, pepper powder and salt.
  • Stir fry until sauces are well combined.
  • Add in cooked rice. you can use freshly cooked rice or leftover rice here.
  • Stir fry on high flame combining everything well.
  • Add in roasted paneer, spring onion and mix well.
  • Enjoy paneer fried rice with gobi manchurian gravy.
