Broccoli peas pulao is a healthy one pot meal and a very delicious cum flavorful rice recipe with different combo of veggies. This recipe is an easy method with all the basic ingredients that a pulao demands. Broccoli peas pulao is a delicious rice with the crunchiness from broccoli, green peas and sweet corn with flavours of mint and whole spices and spiciness from green chilli and peppercorn.

Broccoli is considered a good source of nutrients because it is rich in vitamin C, carotenoids, fibre, calcium, and folate. It is also a source of many substances called phytochemicals, or plant chemicals, that may have anticancer properties. So why not include it in our diet on a regular basis.

This dish can also be prepared with leftover rice or brown rice. This broccoli peas pulao can be served with any spicy curry, gravy or raita and pickles!

So, lets get to the recipe!

 

Ingredients

  • 2 cups Basmati Rice
  • 1 small Broccoli
  • ¼ cup Green peas, fresh or frozen
  • ¼ cup Sweet Corn
  • 1 Onion
  • 2 Green chillies
  • ½ cup Mint
  • ½ tsp. Ginger garlic paste
  • 1 tsp. Coriander powder
  • ½ tsp. Garam masala powder
  • Salt, to taste
  • 2 tbsps. Oil
  • Whole Spices:
    • 1 Bay leaf
    • 1 Star anise
    • 2 Cloves
    • ¼ tsp Cumin seeds
    • ½ Cinnamon stick
    • 2 Cardamoms
    • ¼ tsp. Fennel seeds
    • ¼ tsp Peppercorn

 

Method

  • Wash and soak basmati rice in water for 20 minutes.
  • Cut the broccoli florets with stem using a knife and keep it aside. In a bowl of hot water add the broccoli florets and blanch them for a minute. Do not exceed more than a minute as the broccoli needs to be cooked with rice and it will become mushy then. So, after a minute drain the water and keep the florets aside.
  • Slice the onion thin, make a slit in the center of green chilli, wash and chop mint and keep the blanched broccoli ready to cook draining the water.
  • Heat oil in a pan, add the whole spices. When aromatic add sliced onion, green chilli and chopped mint together. Saute well till onions turn light pink and the mint shrinks in quantity.
  • Now when onions are sautéed, add ginger-garlic paste and saute well till the raw smell goes.
  • Next add the blanched broccoli, green peas, sweet corn, salt, coriander powder and garam masala powder. Saute for a minute.
  • Again, add the soaked rice along with water and mix well.
  • Transfer it to a rice cooker and cook till done. If using pressure cooker, cook for 2 whistles. When done allow the rice to rest for 5 minutes then fluff it from the sides gently using a fork/ spatula and serve it hot with raita or any spicy curry of your choice!
