This delicious cinnamon almond flour bread is a versatile low carb, gluten free and paleo bread recipe my whole family loves! It is made from simple ingredients like almond flour, coconut flour, eggs and coconut oil. You can also substitute almond flour with ground almond but the texture of the bread will be different. This bread is nourishing, soft and delicious. And I must say it pairs well with butter, jam, almond butter/ peanut butter, honey, cream cheese, honey or even a fried egg on top.

This wholesome bread makes a perfect breakfast or snack and is a low sugar paleo bread recipe that can be enjoyed by the whole family.

For this bread, you will need…

 

Ingredients

  • 2 cups fine blanched Almond flour
  • 2 tbsps. Coconut flour
  • ½ tsp. Sea salt
  • 1 tsp. Baking soda
  • ¼ cup Flax seed meal or Chia meal, ground
  • 4 Eggs and 1 Egg white whisked together
  • 1 ½ tsps. Apple cider vinegar or Lemon juice
  • 2 tbsps. Maple syrup or Honey
  • 2-3 tbsps. of clarified butter (melted) or Coconut oil (I use coconut oil)
  • 1 tbsp. Cinnamon plus extra for topping
  • Optional chia seed to sprinkle on top before baking

 

Method

  • Preheat oven to 180°C. Line an 8×4 bread pan with parchment paper at the bottom and grease the sides.
  • In a large bowl, mix together almond flour, coconut flour, salt, baking soda, flaxseed meal or chia meal, and ½ tablespoon of cinnamon.
  • In another small bowl, whisk together eggs and egg white. Then add in maple syrup (or honey), apple cider vinegar, and coconut oil.
  • Mix wet ingredients into dry. Be sure to remove any lumps that might have occurred from the almond flour or coconut flour.
  • Pour batter into the greased loaf pan.
  • Bake at 180ºC for 30-35 minutes, until a toothpick inserted into center of loaf comes out clean. Remove from oven.
  • Next, whisk together the other 1 to 2 tablespoons of melted butter (or oil) and mix it with half tablespoon of cinnamon. Brush this on top of your cinnamon almond flour bread.
  • Cool and serve or store for later.
