Flax seed raita is a very easy and quick raita with loads of health benefits. Flax seeds are the richest source of omega-3 fatty acids and are good for the heart. They are safe to be consumed by people with high blood pressure and diabetes. Flax seeds are essential to build immunity, prevent LDL oxidation and heart ailments. Combing flax seeds with calcium rich yoghurts makes a delectable flax seed raita. Adding grated bottle gourd to it adds volume to the dish while mint and coriander leaves give it an awesome flavour. Cooked bottle gourd can be substituted with grated cucumbers also, to give a tasty cucumber flax seed raita. In case you are using cucumber only difference is you do not have to cook it for making the raita.

Ingredients

  • 1 cup Bottle gourd, grated
  • 1 cup Yoghurt
  • ½ cup Coriander leaves and Mint leaves, finely chopped
  • ½ tsp. Cumin seeds, roasted
  • ¼ tsp. Black Salt
  • ½ tsp. Sugar
  • 1 ½ tbsp. Flax seeds, roasted and coarsely ground
  • Salt, to taste

 

Method

  • Wash, peel and grate the bottle gourd. Make sure to use the grated bottle gourd immediately so that they don’t get discoloured.
  • Combine the grated bottle gourd with quarter cup of water in a deep pan and mix well. Cook it in a low to medium flame till the water evaporates. Keep aside to cool.
  • Take the yoghurt in a bowl and whisk it well to get a smooth texture.
  • Add the chopped coriander and mint leaves to the blended yoghurt.
  • Next add roasted cumin seeds. To extract more flavour, crush them lightly between your palms and add it.
  • Again, add coarsely ground flax seeds to the above mix.
  • Next add black salt and sugar. Black salt adds flavour to the dish while sugar enhances the flavour.
  • Finally, add the cooked bottle gourd to it.
  • Add salt to taste and mix well.
  • Refrigerate at least for one hour before serving.
  • Serve chilled!!
