This quick and easy chickpea curry with quinoa will be on your table and ready to eat in less than 30 minutes. Also, the quinoa is ready in 15-20 minutes. This is a winner recipe with great flavors!

On days that I’m busy, I love to make this delicious dish that usually takes me around 30 minutes to prepare. Chickpeas are healthy for you as they contain lots of protein, fibre, and manganese along with antioxidants that help with weight loss and reduce the risk of cardiovascular disease.

Quinoa is a delicately flavored grain, native to South America. It can be found in most health food stores. For even more flavorful quinoa, use vegetable stock in place of the water while cooking quinoa.

Now, over to the recipe….

 

Ingredients

For Chickpea Curry

  • ½ cup Chickpeas (Kabuli Chana)
  • 2 tbsp. Ghee
  • 2 tsps. Garlic, chopped
  • ½ cup chopped Tomatoes
  • 2 tsps. chopped Ginger
  • Salt, to taste
  • 2 tsps. chopped Green Chillies
  • 1 tsp. Coriander powder
  • 2 tsps. Garam masala
  • 1 tbsp. Lemon juice
  • 2 tbsps. chopped Coriander, for garnishing

For Quinoa

  • 1 cup Quinoa, uncooked
  • 2 cups Water 
  • 2 cups Vegetable stock (if not using Water), optional

 

Method

  • Clean, wash and soak the chickpeas overnight.
  • Next day, wash chickpeas again, drain, add 1 ¼ cups of water and salt. Pressure cook the chickpeas for 4-5 whistles. Keep aside to cool.
  • Heat ghee in a pan and add garlic, ginger and green chillies and sauté till they turn golden brown.
  • Add the tomatoes and mix well.
  • Reduce the flame and cook until the ghee separates.
  • Add the cooked chickpeas along with the water and salt and cook for 3-4 minutes.
  • Next add lemon juice, garam masala and coriander powder and stir well.
  • Sprinkle chopped coriander leaves on the curry.
  • To cook quinoa – in a separate pan, combine 2 cups of water and 1 cup of quinoa. Bring to boil, reduce heat to simmer and cook until all liquid is absorbed, and quinoa is cooked and fluffy.
  • To serve, place a scoop of quinoa into the middle of each plate. Top with chickpea curry.
  • Tasty quinoa with chickpea curry is ready to devour!!
